Smoky Vegan Layered Bake

Layers of smoky tofu & vegetables in a bechemel sauce.

Ingredients

  • 1 pack of Smoky Tofu
  • Mixed Vegetables - suggest: Potatoes, Brussel Sprouts, Savoy Cabbage, Carrots, Mushrooms, Onion, Garlic (Smoked Garlic works well)
  • Vegetable Oil
  • Seasoning
  • Herbs to taste (Parsley is good)
  • Bechemel Sauce* (ready made is available in Unicorn or make your own. it is very easy, I used Rose Elliott's recipe)

Method

  • Saute the Onions and Garlic in a little Vegetable Oil
  • Add to the bottom of a greased oven proof dish.
  • Slice and add a layer of Smoked Tofu.
  • Add a layer of sliced Mushrooms.
  • Cook the other Vegetables (steam or boil)
  • Drain well and add these as the top layer in the dish
  • Season to taste
  • Make or cover with the sauce.
  • Bake in the oven on around 200 deg for 30 mins
